Introduction

A Mother's Legacy of Southern Cooking and More contains over 280 recipes for appetizers, beverages, meats, pies, salads, and many others. It also contains helpful hints, weights and measures, a quick reference list, ingredient substitutions, plus a handy index. It is ringbound across the top rather than the left side for ease of use and for saving space on the kitchen counter.

I dedicate this cookbook to the memory of my mother, Barbara Griffith, and to my six-year-old daughter, Bailey.

My mother died of cancer in the fall of 1997. Mom was a wonderful cook. Some of my fondest memories are of those helping Mom in the kitchen and cooking. Our family has always been very close, and even though my sister, Connie, and I have families of our own, we all get together with Dad at least once a week.

Mom and I discussed putting a cookbook together, but unfortunately she died before it could be created. Due to the fact that we had so many recipes, it took me awhile to prepare this cookbook; however, I think Mom would be proud of the final product.

Also, in honoring my daughter with this cookbook, I hope to teach Bailey the basics of cooking as Mom taught me. So I have included some simple recipes with easy instructions for the beginner cook, as well as more involved recipes for the experienced cook.

Even though my intentions were to hand down Mom's legacy of cooking to Bailey, I was encouraged by a very close friend and Bailey's paternal grandmother, Betty, to share this cookbook with others. As it sells, a percentage of the proceeds will be given to the American Cancer Society and/or other cancer-related charities, possibly one day curing someone else's mother, family member, or friend of this disease.

I have learned a very important lesson during my mother's illness and passing: we should never take our life and health for granted, and we should cherish every moment, because when you lose someone so precious, all that remains are your memories.

I hope you enjoy this cookbook and create wonderful memories, too!

Special Notes

Our family has always written recipes to record special moments with our family and friends. So in this cookbook I have included a "Special Note(s)" section on each recipe for you to record your favorite recipes, memories, and when they took place.

For instance, on February 15, 1970, my sister Connie, Dad, and I made Peanut Butter Cookies (recipe on Page 123 of the cookbook). On Mom's copy of this recipe we noted, "Connie, Dad, and Kathy made these cookies 2-15-70, Sunday. They were GREAT." Now that I am older, every time I prepare these cookies and see this note, it reminds me of that special time with Connie and Dad. I am so thankful we made these notes back then because it has become a diary of some of our favorite memories.

Also, this tradition has continued. In 1997 my daughter Bailey and (her grandfather) (my Dad) made these cookies for the first time. They accidently left out the egg, so they had to make another batch. This is a cherished memory that they now have documented for years to come.

In addition, I have included a few "Special Note(s)" of my own on certain recipes in this cookbook. I hope you find the Note(s) helpful.
